This is the IT salad in our family right now. It is the most requested by my niece's. It's super delicious with the crispy sweetness of the apples along with the crunch of the sliced almonds, and the bite of the feta. All the ingredients are just so good together.
Salad:
4 cups baby spinach or mixed greens
1 apple - I like the Fuji1 handful dried cranberries or cherries
3 tablespoons sliced almonds
1/2 cup crumbled feta cheese
Dressing:
1/4 cup olive oil
1 tablespoon honey
1/4 cup apple cider vinegar
2 teaspoons dijon mustard (or whole grain)
