Roasted Maple Acorn Squash

One of my favorite recipes!  This squash is simply delicious with the addition of butter, maple syrup, and herbs of your choice.  You can serve it as a side dish or enjoy it on its own.


Maple Roasted Squash

1 acorn squash, halved lengthwise and take the seeds out 

(I use the seeds - season them up and dry them out in the oven just like making pumpkin seeds)

pink sea salt and pepper

2 tablespoons butter

1 tablespoon maple syrup

Sprinkle the squash with your favorite herbs.  Last time I used thyme, oregano, and parsley.  Sometimes I use rosemary too.  Really use whatever you like.

Heat oven to 450 degrees.

Place cut squash pieces cut side up on foil lined baking sheet.

Season with salt and pepper.  Add 1 tablespoon butter and 1/2 tablespoon or up to 1 tablespoon maple syrup into the cavity of each squash.  Then sprinkle herbs of choice on top.

Roast squash until tender and well browned - basting every 15 minutes.  Cook for 1 hour.  Serve warm.

When it comes to serving the squash is delicious just as is - or you can top it with with a goat or feta cheese - pecans or pine nuts, red onion, etc.  Just like the herbs be creative and add a little of whatever you like.  Just be moderate with the extras because the squash already has the best flavor.
