No Bake Energy Bites
2:27 PMI took an old recipe and played around with it to make it healthier and it didn't disappoint. Here is what you will need:
No Bake Energy Bites
1 cup ORGANIC oatmeal - finely ground in a little food processor
1/2 cup Artisana Organics Raw Pecan Butter with Cashews - I'm going to make my own pecan butter when this runs out because it will be even healthier
1/3 cup local honey
1 cup organic unsweetened coconut flakes - ground in the food processor
1/2 cup chia seeds
1/2 cup chocolate chips (I didn't use healthy here - I used Ghirardelli Bittersweet Chips)
1/4 cup organic dried strawberries - ground in food processor - I was wondering if this would work and taste good and it worked! You could even mix 1/2 cup in.
1 t. vanilla
Mix everything above into a medium bowl - let chill in fridge for about a half hour and then roll into balls. Store in airtight container and keep refrigerated up to one week.
