Pumpkin Pancakes with Chocolate Chunks
9:54 PM
This has been making a frequent appearance at our breakfast table. I love pumpkin pancakes, and this is finally a recipe I consider a keeper.
(I must admit this has been in my draft file forever - time to share!)
Pumpkin Pancakes with Chocolate Chunks
Whisk together:
1 1/4 c. all-purpose flour
2 T. sugar
2 t. baking powder
1/2 t. cinnamon
1/2 t. ground ginger
1/2 t. salt
1/8 t. nutmeg
pinch of ground cloves
In a separate bowl stir together:
1 c. milk
6 T. canned pumpkin puree
2 T. melted butter
1 egg
Fold wet mixture into dry ingredients.
When your pan is heated and ready pour out 1/4 c. of batter for each pancake. Quickly arrange 5 or so Nestle semi-sweet chocolate chunks evenly onto the batter. Cook pancakes about 3 minutes per side. They are so delicious!
This recipe is from Martha - except for the chocolate part!
