This is the IT salad in our family right now.  It is the most requested by my niece's.  It's super delicious with the crispy sweetness of the apples along with the crunch of the sliced almonds, and the bite of the feta.  All the ingredients are just so good together.

I feel so completely happy with every cracker covered bite I take of this pecan cheese spread.  The flavor is addictive.  The ingredients seem like an odd combination.  We have been cooking lots in my family & my sister in law is responsible for finding this recipe that we just cannot get enough of.  Serve it with BIG wheat thins.  And for the pecans - we use the pecans we soak overnight and roast for 24 hours.  You can find the recipe for those here.

I made this cheesecake for my Thursday April Fools Day Easter gathering.  It was so darn delicious!!! The original recipe called for Meyer lemons which I could not find.  I used 2 regular old lemons and it was fantastic!!!  I'll put this up today incase you are still searching for a really good Spring dessert.  And those bunny plates - Meri Meri found at Home Goods :)
