Dairy and Gluten Free Almond Butter Power Balls

 My oldest, Josh, has a strict eating plan.  He is very into weight lifting.  On the days he decides he can eat anything this is one of the sweet items that he likes me to make.  They are so good!  My favorite almond butter to use is the Trader Joe's.  I think it works best for the right consistency.  Also, they are so full of healthy ingredients so I go the extra mile and use the Enjoy Life chips, gluten free oats, and organic coconut flakes.  If I feel like they need to be a little more sticky before rolling I sometimes add a smidge of olive oil.  Such a good recipe.  I've linked up al the items that I've used in my photo's at the end of this post.

Dairy and Gluten Free Almond Butter Power Balls

1/2 cup Trader Joe's Raw Almond Butter, Creamy
1 cup gluten free oatmeal
1/3 cup honey
1/2 cup ground flaxseed
1 cup organic coconut flakes
1/2 cup Enjoy Life mini semi-sweet chocolate chips
1 teaspoon vanilla




Mix together all of the above.  Chill in the refrigerator for half an hour.  Roll into balls.  Store in airtight container in the fridge for up to a week - but really they won't' last that long.
